Orange Chicken Lettuce Wraps
My farmer and I have been trying to eat a little healthier this year. You know, less pasta and cheese, Midwestern staples! I made these chicken lettuce wraps this week and we loved them!
I added two shredded carrots, the whites of some green onions, and a small can of water chestnuts to the chicken. Really yummy!

It is planting season on the farm! This is an exciting time of year, and it also means that I have been cooking up a storm. Here are some recent goodies I have made for my hungry farmers!

I have recently had the pleasure of cooking some meals for some mamas with new babies! This recipe is so popular, that I thought I would just post it and let you all enjoy it.  It is from a friend of my family, so I can't take credit for its creation. The recipe is easy to half, and it freezes well!

BBQ Meatballs
2 lbs. ground beef
1 lb. sausage
2 eggs, lightly beaten
2 C. quick cooking oats
1 C. evaporated milk
1 C. finely chopped onions (I use a little less.)
2 t. salt
1/2 t. garlic powder
Pepper to taste

Mix everything together in a big bowl.  Shape into 30-40 walnut sized balls.  Bake at 375 for 30 minutes and drain the grease. 

In the meantime, make the sauce!
2 C. ketchup
1 1/2 C. brown sugar
1/2 C. finely chopped onion
2 t. liquid smoke
1/2 t. garlic powder

Heat this together in a pan on the stove. Then pour over the meatballs after the grease has been drained.  Enjoy!  These also can be kept warm in a crock pot.
